Strange combination of seemingly random symptoms and I can't find a doctor who believes me

A little context: I am a biological female, I am 32. I contracted covid for the first time August 2022. I had been vaccinated, but it kicked my ass. I was so sick for 2 weeks. I mostly got better, but was left with daily constant headaches that I still have and a migraine about once a week on average. I have seen several doctors including neurologists and specialists and had a bunch of tests done. But, physically speaking, I am "fine." They have occasionally taken spinal fluid in order to relieve some pressure in my head and I was given an Idiopathical Intracranial Hypertension diagnosis, which really just means "too much pressure in your head and we don't know why" and that was the last answer I was given. I have been vigilant about tracking my headaches and any other symptoms that seem strange or out of the ordinary and I have a few that I SWEAR have to all be connected somehow because I did not have any of these symptoms prior to getting Covid. They are small and not necessarily life altering or anything, but I have talked to my doctors about them in hopes of fitting some pieces together to figure out what is wrong and maybe potentially get some relief from the head pain. But so far I have been met with nothing but dismissal and disbelief. I am hoping that maybe this post will reach a person who might have some experience to help me. Some of these random symptoms are: 1) sudden, intense nausea that triggers one sneeze. After that sneeze, the nausea goes away immediately. This happens 5 - 8 times a week. 2) random moments where I feel almost like I am falling asleep or spacing out completely and I don't realize it is happening at all. I can be sitting, standing, driving, talking. It hits me out of nowhere and I jump myself out of it, almost like when you are drifting off to sleep and have a dream you are falling and your body jerks you awake. It is involuntary. 3) intensely itchy skin, specifically on my stomach, under my breasts, and on the insides of my arms/elbows. No rash or hives, lotion doesn't help. But when it flares up, it will keep me awake all night and I will itch myself until I bleed. 4) overly tender/sensitive muscles. This sounds weird. It isn't my skin that is tender, but I think the muscles underneath. On bad days, I can bump into something that would normally be no big deal, but it hurts enough to feel like it should bruise. This mostly happens on my thighs, but occasionally my upper arms, too. 5) any aerobic exercise immediately makes my head pound. No matter how much water I drink or ibuprofen or whatever I take helps. I am only able to do mild exercise, like yoga, which is great. I love yoga, but no longer being able to play volleyball or jog has attributed to weight gain that I feel might make some of my symptoms worse. Any thoughts??
