People who actually manage to track their health with ADHD. How?

I've struggled to stay on top of my health since starting uni and I can never seem to make anything stick long term. I've tried different apps, to do lists, schedules and always fall off after a few days or weeks. I was diagnosed with ADHD a while back and I'm still no closer to figuring out how to actually track anything consistently. Those of you who actually manage to log what you eat, stick to an exercise schedule, meal prep etc, how do you do it? Do you count calories exactly or just approximate? Do you schedule exercise at a specific time or just add it to a list for the day? Because for me that turns into Parkinson's law where it just expands to fill the whole day and never happens. The only reason I actually exercise is because if I don't do something physical during the day I get really understimulated and my body kind of forces me into it. But it's not like I'm tracking it or hitting any goals, it just happens. I want to actually make progress. I just don't know how to track it in a way that works with my brain rather than against it
