Do i have to eat the same amount of calories everyday?

I understand how important it is to go on a calorie deficit but unfortunately I’m not able to track calories (mental health reasons) So I was wondering if my weight loss journey would take much longer or possibly not work at all if I’m not consuming the same amount of calories everyday? I’ve currently reduced my portions significantly, reduced artificial sugar & also reduced carbs. I basically eat the same meals everyday too- just a big bowl of random veggies with a scoop of chicken breast & tofu. That alone has been enough to lose a lot of water weight pretty quickly but maybe this won’t be effective for actual fat loss? Roughly I’d say I’m consuming between 1,500 (at minimum) to 1700~ish (my maintenance cal was 2k+) But since my daily calorie intake isn’t consistent, I feel like my weight loss journey isn’t going the way I was hoping for. I mean its still too early to tell but I just feel like my weight will fluctuate a lot if I don’t track my calories & stick to a new maintenance cal? /:
