Seeking advice on hunger, fatigue, and stomach pain

I am 30F and I've experienced soreness and burning in my lower abdomen for well over a year now, especially prevalent in my lower right quadrant (sharp pain if I touch it). I poop SO much, at least 3 times per day, and often it is diahrrea but not always (and presence/lack of diahrrea does not seem to impact the pain). After nothing coming up from blood and stool tests or abdominal and pelvic ultrasounds, my PCP ordered me a colonoscopy/endoscopy. Disappointingly, the results didn't really address my symptoms. They removed polyps that turned out to be precancerous, and I received diagnoses of esophagitis and gastritis. Negative for H.Pylori. The only treatment I was given was to start on 20mg Omeprazole, though was never told what this would address or how long I should take it. Can't get in to see a gastro till June, and it's not even the doctor but one of his PAs. I had a CT scan of the abdomen and pelvis following the colonoscopy, results were normal. I've been on Omeprazole for over a month and haven't noticed any improvement; to be honest, I feel worse now than ever. I didn't experience acid reflux prior to starting the medication... I do get strong hiccups after eating and those have maybe gotten less frequent on the medicine. My stomach/abdominal pain has not gone away, and I feel hungry ALL the time. The pain is worse when I'm hungry. No matter what I eat I don't feel full. Headaches accompany the hunger. I am also fatigued as a baseline; I sleep on average 7 hours per night and still some days every muscle in my body is tired and lightly sore. I also have high cholesterol and saw a dietician a few weeks ago to address that. She suggested I eat more fibrous foods and fewer processed foods, which I have been doing. I have switched to high-fiber tortillas for my lunchtime wraps, every morning I eat Greek yogurt with granola and berries, and I eat cottage cheese with berries as a snack. I have never been someone to eat large meals but I've been especially careful to eat more frequent smaller meals throughout the day. I have a 30 oz. water bottle and I drink at least two of them per day. I'd love to know if any of these symptoms could be caused by Omeprazole, and if there are any effective remedies out there. This is impacting my day to day and making it difficult to focus, especially on school work for my part-time masters degree program. I am immensely grateful for any help or perspectives shared. For context, other medications I take include birth control, 10mg daily Lexapro, and Allegra daily.
