Is gluten anybody else's worst trigger?

I'm assuming I have some level of intolerance to gluten. I tested negative for celiac and don't get triggered by smaller amounts of gluten, but definitely when it's more abundant in my diet, I have more frequent episodes. When I don't buy breads and pastas in particular, I can eat most acidic foods with no problems. I'm curious to see if anyone here has experienced similar?
