Executive functioning issues - strategies for work projects?

Started having executive functioning issues as after COVID. not sure if it's my general anxiety getting worse, low grade depression (tried Adderall and Vyvanse as possible ADHD with no real improvement). I've switched jobs 3 years ago to a BA role and I'm not used to project work. managing and tracking of so many unknowns while trying to build and move forward on so many pieces. are there any strategies / tools for managing so many pieces as a person who constantly forgets what they're doing while they're doing it? working memory is shot / managing the "big picture" sux as anxiety kicks in.
